Vegan Quinoa Burrittos, Great for Camping!

If I’m making these for a camping trip, after I cook everything for around 20 minutes on the stove, I heat up the tortillas and pre-wrap burritos until the ingredients are gone usually makes 6-8. I then wrap the burritos in foil so they’re ready to heat up over a campfire!

• Tortillas
• Spinach
• 1 can black beans
• 1 tablespoon olive oil
• 2 cloves garlic – chopped/minced
• 1 jalapeno
• 1 cup quinoa – rinsed
• 1¼ cups vegetable broth
• 2 cups cherry tomatoes – cut in half
• 1½ teaspoons chili powder
• ½ teaspoon ground cumin
• ½ teaspoon salt
• Crushed red pepper flakes to taste
• Cilantro to taste

These are seriously the best burritos. Healthy, delicious, and super easy to make! You throw everything in a pan bring it to a boil then cover and leave to simmer for 20 minutes. And you can add and subtract or substitute any of the ingredients easily. Squash, corn, onions, cheeses and meats would all work as additions.
